Ingredients

  • Vegetable Barley Soup5 cups water

  • ½ cup onion, chopped

  • ½ cup celery, chopped

  • 1 cup mixed vegetables, frozen

  • 1 cup potatoes, cooked

  • 1 cup tomatoes, canned

  • 1 teaspoon pepper

  • ½ tablespoon parsley, freeze-dried

  • 2/3 ounce vegetable base

  • ½ cup barley, uncooked

 

Directions

  1. Combine all ingredients, bring to a boil.

  2. Reduce heat and simmer for 1 hour.

  3. Adjust seasonings to taste.
