Caramelized Vegetable and Tofu Stir-Fry

Tofu is a versatile cooking ingredient. This recipe features a bold caramelized sauce and is served over soba noodles.

 

Ingredients

  • vegetable stirfry1 1/3 pounds tofu, cubed

  • ¼ cup soy sauce, low sodium

  • ¼ cup brown sugar

  • ¼ teaspoon chili flakes

  • 2 tablespoons olive oil

  • 2 tablespoons garlic, minced

  • 1 tablespoon ginger root, minced

  • 1 cup green onions, thinly sliced

  • 2 red bell peppers, 1” cubes

  • 2 cups broccoli florets, blanched

  • 1 cup mushrooms, sliced

  • ½ cup vegetable base

  • 1 pound soba noodles, cooked according to package directions

 

Directions

  1. Deep fry tofu until golden brown; set aside.

  2. In a saucepan, combine soy sauce, brown sugar and chili flakes.

  3. Simmer until sugar is melted and mixture becomes a syrup, about 5 minutes. Set aside.

  4. In a skillet, add oil; when hot, add garlic and ginger. Stir-fry briefly.

  5. Add remaining vegetables in order and stir-fry for about 30 seconds.

  6. Add tofu and continue to stir-fry until vegetables are tender but crisp.

  7. Add soy sauce mixture, and stir until vegetables are coated.

  8. Serve over cooked soba noodles.
