Mushroom Paprikas

The comfort of pasta paired with the boldness of paprika-seasoned mushrooms. Parika is a spice made from capsicum peppers, which are very high in vitamin C and also contain other antioxidants.

Ingredients
Sauce

  • 2 pounds mushrooms, sliced
  • ¼ cup margarine
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • ½ cup tomatoes, diced
  • ½ cup water
  • ½ teaspoon salt
  • 2 ½ tablespoons paprika
  • ½ teaspoon pepper
  • Pinch of rosemary  

Thickener

  • ½ tablespoon margarine
  • ½ tablespoon flour  
  • 6 cups cooked pasta  

Directions

In a large pan, melt margarine over medium-high heat. Brown onions, then add tomatoes. Add all seasoning and garlic. Cook for 5 minutes. Add mushrooms. Check saltiness, add extra if needed. Reduce heat to low. Simmer for 20 minutes. Add water. Cover, bring to a boil, and then lower heat as low as it will go. Cook for about 1 hour. Stir occasionally. Melt margarine in pan. Mix in flour. When forms a paste, remove from heat and mix into sauce thoroughly. Serve over pasta.
