Here’s a delicious and easy fish taco recipe from our kitchen, that’s a favorite among our patients and visitors. The slaw is a storehouse of antioxidants that protect against cancers and help reduce LDL (bad) cholesterol. It is also loaded with vitamins C and K. Enjoy!
- 1 ea. lime, quartered
- 4 ea. corn tortillas
- 8 oz pre breaded (beer battered) cod
- ½ oz fresh jalapeno, minced
- 4 oz cabbage, julienned 1/8” thick
- 1 fl. oz plain yogurt
- 1 oz red onion, minced
- ½ oz cilantro, chopped
Combine all ingredients for slaw and mix well.
Bake fish – following manufacturers instructions.
Steam tortillas 1 minute or until soft.
Evenly portion fish onto tortillas.
Top fish with slaw, then salsa.
Garnish with limes and any other items like more cilantro, cotija cheese, scallions, avocados.
