Vegetable Barley Soup
Perfectly satisfying for a cold day, this delicious soup will keep you feeling full and warm.
- 5 cups water
- ½ cup onion, chopped
- ½ cup celery, chopped
- 1 cup mixed vegetables, frozen
- 1 cup potatoes, cooked
- 1 cup tomatoes, canned
- 1 teaspoon pepper
- ½ tablespoon parsley, freeze-dried
- 2/3 ounce vegetable base
- ½ cup barley, uncooked
Combine all ingredients, bring to a boil. Reduce heat and simmer for 1 hour. Adjust seasonings to taste.
