Savory Vegetarian Tostada
The lentils in this recipe contain dietary fiber, folate, vitamin B1 and minerals. Garlic adds flavor and can decrease blood pressure, high cholesterol and atherosclerosis, while the tomato sauce is a good source of lycopene. The flavors of this easy-to-prepare entrée are sure to delight.
- 2 cups lentils, cooked
- 2 cups tomato sauce
- 4 cloves garlic, minced
- 2 tablespoons chili powder
- 2 teaspoons cumin
- 1 teaspoon red pepper flakes
- 8 tostada shells
- 2 cups lettuce, chopped
- 2 tomatoes, chopped
Combine the lentils, tomato sauce, garlic, chili powder, cumin and pepper flakes. Cover and simmer for 30 minutes.
