Pomegranate, Almond & Apple Salad

Differing studies have shown the benefits of Quercetin for relief of asthma symptoms. Quercetin is a chemical naturally found in apples and red onions. It works as an anti-inflammatory and an anti-histamine, and it has been used to reduce asthma and other allergy symptoms. 

Apples are in abundance this time of year, so respiratory sufferers are encouraged to try out the recipe below to find some relief, while eating healthy in the process.

Pomegranate, Almond & Apple Salad
(Serves 1)

Ingredients:
  • 1 pomegranate – seeds removed and set aside

  • 1 apple – skin on, chopped

  • ¼ cup plain almonds – chopped, whole or sliced

  • 1-2 cups Arugula leaves, Spinach leaves, Baby Romaine leaves or Spring Mix (To your taste – mix them up or use alone – be creative! All are available pre-mixed, cleaned and bagged).

  • 1 stalk celery – chopped

  • 2 tablespoons orange juice

  • 1 teaspoon honey

Directions:
  1. Combine pomegranate seeds, apple, nuts, greens and celery in a large bowl.

  2. Mix together orange juice and honey in a separate, smaller bowl.

  3. Drizzle this orange juice and honey dressing over salad ingredients, and mix well before serving.

Hints:

For best taste, chill prepared salad ahead of time, and make dressing to add to it at time of service.
