Caramelized Vegetable and Tofu Stir-Fry

Tofu is a versatile item with which to cook. This recipe features a bold caramelized sauce and is served over soba noodles.

Ingredients

  • 1 & 1/3 pounds tofu, cubed
  • ¼ cup soy sauce, low sodium
  • ¼ cup brown sugar
  • ¼ teaspoon chili flakes
  • 2 tablespoons olive oil
  • 2 tablespoons garlic, minced
  • 1 tablespoon ginger root, minced
  • 1 cup green onions, sliced
  • 2 red bell peppers, 1” cubes
  • 2 cups broccoli florets, blanched
  • 1 cup mushrooms, sliced
  • ½ cup vegetable base
  • 1 pound soba noodles

Directions

Deep fry tofu until golden brown, set aside. In a saucepan, combine soy sauce, brown sugar, chili flakes. Simmer until sugar is melted and mixture becomes a syrup, about 5 minutes. Set aside. In a skillet, add oil; when hot, add garlic and ginger. Stir-fry briefly. Add remaining vegetables in order and stir-fry for about 30 seconds. Add tofu and continue to stir-fry until vegetables are tender but crisp. Add soy sauce mixture and stir until vegetables are coated. Serve over soba noodles.
