A variety of spices added to this black bean soup create an enticing entrée that will warm you up.

 

Ingredients

  • Boulder Black Bean Soup1 tablespoon olive oil

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1 teaspoon dried whole oregano

  • ½ teaspoon dried thyme

  • ½ teaspoon cumin

  • ½ teaspoon cayenne pepper

  • 2 cups black beans, cooked

  • 1 cup tomatoes, canned

  • 2 cups water

  • 2 tablespoons vegetable base

 

Directions

  1. Heat oil in saucepan over medium heat.

  2. Sauté onion and garlic until tender.

  3. Stir in seasonings; cook 1 minute longer.

  4. Add beans and broth to saucepan.

  5. Bring to a boil over medium heat, then simmer uncovered for 20 to 30 minutes.
